Ingredients

  • 2 Atlantic salmon fillets
  • 1 ripe mango, diced
  • 1/4 red onion, diced
  • 1/4 red bell pepper, diced
  • 1/4 yellow bell pepper, diced
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon fresh lime juice
  • Salt and black pepper to taste
  • Olive oil for brushing

Instructions:

  1. Preheat a grill or grill pan to medium-high heat.
  2. In a mixing bowl, combine diced mango, red onion, red and yellow bell peppers, cilantro, lime juice, salt, and black pepper. Mix well and set aside.
  3. Brush salmon fillets with olive oil and sprinkle with salt and black pepper on both sides.
  4. Place salmon fillets on the preheated grill and cook for 4-5 minutes per side, or until the fish is cooked through and flakes easily with a fork.
  5. Remove salmon from the grill and transfer to a serving plate. Top with mango salsa and serve immediately.
