Grilled Atlantic Salmon with Mango Salsa

Ingredients
- 2 Atlantic salmon fillets
- 1 ripe mango, diced
- 1/4 red onion, diced
- 1/4 red bell pepper, diced
- 1/4 yellow bell pepper, diced
- 1/4 cup chopped fresh cilantro
- 1 tablespoon fresh lime juice
- Salt and black pepper to taste
- Olive oil for brushing
Instructions:
- Preheat a grill or grill pan to medium-high heat.
- In a mixing bowl, combine diced mango, red onion, red and yellow bell peppers, cilantro, lime juice, salt, and black pepper. Mix well and set aside.
- Brush salmon fillets with olive oil and sprinkle with salt and black pepper on both sides.
- Place salmon fillets on the preheated grill and cook for 4-5 minutes per side, or until the fish is cooked through and flakes easily with a fork.
- Remove salmon from the grill and transfer to a serving plate. Top with mango salsa and serve immediately.
